Red Scramble

My morning always starts with a big cup of coffee. And that's it. I really don't like having breakfast. But that doesn't mean I don't like the food, which is usually served for breakfast time. So why not prepare yourself a Red Scramble for lunch? I know you don't have any objections;);) We need:
- olive oil
- 1 red onion and some veggies, for example tomatoes, aubergines, pumpkins or broccoli (whatever you like)
- 2 garlic cloves
- 250 g firm tofu
- 2 t red pesto
- fresh black pepper

1) Slice the onion (not chop!) and the other veggies.
2) Heat the olive oil and saute the onion for about 3 minutes, until softened. Add the veggies , stirring occasionally for 10 minutes.
3) Crush the garlic and add to the veggies.
4) Break the tofu off into the pan in bite-size pieces. Don't make the pieces too small as they will break up a bit in the pan. Cook for about 10 minutes, tossing occasionally.
5) Mix the pesto with the pepper. Add to the veggies. Cook until the pesto is heated through (about 2 minutes).
6) Serve with fresh parsley. And immediately:)
