Hot White Soup

With the outside temperature falling and falling what can be better than a delicious soup? Before trying the Hot White Soup I hadn't believe that parsnip is so good;) So, start with:
- olive oil, 1 onion, 1 leek, cca 500 g parsnip, 600 ml vegetable stock
- 1 t ground curry, 1 t ground cumin, 1/2 chili (flakes or grounded)
- 1 dcl (soy) cream, 1 t coriander (fresh or grounded)

1) Chop the onion and the leek, dice the parsnip. Heat the olive oil and add all veggies. Stir for five minutes. Add the spices: curry, cumin and chili. Cook for three minutes. Add the vegetable stock and cook until the veggies are tender.
2) Blend the soup in a blender. Add the cream. Bring to boil, than add the coriander and serve.
